The breakfasts provided by the Millennium Hotel for our camp breakfasts were delicious and nutritious and had carb counts calculated by our outstanding diabetes and nutrition coaches, but all the campers wanted to know more about Coach Jenny’s self-made breakfast cereal so we asked for the recipe. Here it is:
Ingredients and Directions:
1/3 cup old fashioned rolled oats
1 tbsp chia seeds
1/8 tsp salt
1/2 cup unsweetened vanilla hemp milk
Blend together and cook in microwave for 2 minutes
(at camp I used hot water and just let it sit a minute to blend)
Once cooked, add:
1 Tbsp organic hemp high fiber protein powder
1 Tbsp flaxmeal (ground flax seed)
1/4 cup organic Smart Bran Cereal (by Nature’s Path)
1/2 tsp cinnamon
1/2 tsp Vanilla Stevia liquid sweetener
1/4 cup frozen wild blueberries
Mix together
On the top I add:
1 tsp Earth Balance margarine or 1 tsp butter
A shake of coconut sugar
